Christmas Cooking

Well, I was in charge of appetizers for Christmas.  I thought I'd share what I made, along with the recipes I used.

Raspberry paleo truffles without any pink

The truffles are all paleo-friendly.  I used a semi-sweet chocolate and white chocolate to dip them in.  I indicated what was what with a little bit of candy melt color.  The raspberry truffles actually come from a strawberry recipe.  I just replaced the strawberries with raspberries. Here are the orange creme and the lemon truffle recipes.  For the lemon, I had to add a 1/2 cup of coconut butter to it.  It just wasn't setting up like it was supposed to.  These were pretty easy and tasted awesome!

Chicken liver, shallot, and thyme pate.  I had never eaten this or made it, so I gave it a shot.  I am not a fan of this, though it smelled good when it was cooking.  This is a classic pate.  People either love it or hate it.  I ended up tying a ribbon around the jar and it made it more presentable.

Devils on Horseback.  These are FANTASTIC!  Its a date stuffed with stilton, wrapped in bacon.

Donut Hole Hedgehogs.  So cute, so easy.  Good for a Christmas morning.  I used a little chocolate treat glaze to dip part of the donut hole in, then rolled them in chocolate jimmies.

Petit Fours.  I took two frozen pound cakes (let them thaw), thin sliced them, and used a cookie cutter to cut out the exact same shape for all of the mini-cakes.  These are filled with some chocolate frosting.  I used Wilton Treat Glaze to coat them.  The chocolate ones are covered in chocolate treat glaze and have a few chocolate jimmies on them.  Treat glaze sets up fast, fair warning.

The other petit fours (aka mini-cakes).  White = Orange marmalade filled, topped with an almond slice.  Pink = Marshmallow creme filled, topped with sugar glitter flake.

I felt I had a good mix of sweet and savory flavors.  My mom had a cheese and cracker tray and a veggie tray over at her place (the apartment across the hall), so we were not without those staples.  Things were maneuvered around, so my apartment became home to desserts and sweets.  The devils on horseback and the wreath were the first ones gone.

SOOOOOO glad I had finished all of my kitchen painting.
