Easter

I enjoy Easter, not as a religious holiday, but as a celebration of spring.  I typically have fresh cut flowers in my kitchen on Easter.  I also start planning any planting that I want to get started.  I also tend to make food that emphasizes the glory of spring!

This is a fun (and early) menu for those of you who, like me, just want to celebrate new beginnings with the beginning of spring.  Also, this is a paleo meal.  Anyone can eat it, but it does not have any grains or sugars.  It just means that this is a healthy menu - do not be afraid!

My Salad of Spring starts with a salad spring mix.  I then added chopped up strawberries and sliced almonds.  To top this off, I used a mixture of a little apple cider vinegar and extra-virgin olive oil (in the glass).


I really like lamb.  It may be that it's delicious.  I may be the fact that I'm part Greek and lamb is used frequently in Greek cooking.  I don't know.  It's just tasty.  For this meal, I used a pound of ground lamb.  I diced up a third of a yellow onion and 10-12 mint leaves.  I put these into a bowl with a 1/2 cup of shredded mozzarella, a teaspoon of garlic, and a teaspoon of crushed rosemary leaves.  I then add in one egg and my pound of lamb before mixing with my hands for about 3 minutes.  I then rolled 8 balls.  While these baked, I prepared a sweet mint sauce.  This is basically 1-1/2 cups of water, 12-15 mint leaves diced, some agave nectar, and some arrowroot powder whisked together and simmered/boiled until it turns into a lovely sauce.

Roasted beets are different from pickled beets.  Some people have only had pickled beets from a can/jar and that's all they know about beets.  What I did here was wash and peel red beets and golden beets.  I chopped them up into bite size chunks and put them into a ziploc bag.  In the bag went a little olive oil, salt, and pepper.  Give that a shake, dump it into a glass baking dish, and bake for 35-40 minutes!
