I know that I've been going to the gym all the time and have been trying to eat healthy, but around Christmas I LOVE fruitcake.  When I made this, it made my whole place smell delicious!

I found a recipe and modified it.   Here it is, from me to you!

Lonely Hepkat Fruitcake
2 cups Flour
3/4 cup Sugar
3/4 cup Brown Sugar
5 eggs
2 tsp Vanilla
1/2 tsp Baking Soda
1 TBSP Cinnamon
1 TBSP Cocoa Powder
1/4 tsp Clove
1/2 cup Brandy
32 oz Mixed Glace Fruit, diced
2/3 cup Walnuts
2/3 cup Pecans
1/4 Pistachios

1 small container Red Glace Cherries, whole
1 small container Green Glace Cherries, whole

  1. Preheat oven to 300F and line two loaf pans with waxed or parchment paper.
  2. In a bowl, mix together the flour, sugar, brown sugar, eggs, vanilla, soda, cinnamon, cocoa, and clove.
  3. Chop up your walnuts, pecans, and pistachios.
  4. Add in your brandy, chopped nuts, and mixed glace fruit.
  5. Pour your batter into the loaf pans and decorate the top of your loaves with whole glace cherries and pecans.
  6. Bake for 2 hours 15 minutes.  Serve warm!
